The book Vegetables is published as the seventh item in the series "Old kitchen recipes from Central Europe". The presented recipes were popular over 120 years ago in Central Europe - from Lithuania to Austria.
The author, Maria Ochorowicz-Monatowa, practiced at the imperial court in Vienna and published extensively on nutrition.
Some of the recipes in this book may seem bizarre (that's how they used to cook!), but most of them describe how to prepare tasty dishes. In addition to the various ways of making vegetables, the book also includes recipes for vegetable sauces and various additions. The traditional recipes in the book include the following vegetables: eggplants, celery, tubers, green beans, kale, collard greens, green peas, cardamoms, salsify, tomatoes, red cabbage, lettuce, beetroot, onions, shallots (small onions), kohlrabi, asparagus, pumpkin, cauliflower, turnip, celery, parsley, horseradish, sorrel, spinach, artichokes, potatoes, carrot, dill, cucumber, garlic, radish, pepper.
Sometimes it's good to introduce a little variety in the kitchen and eat something different from the dishes served every day.
